What to look for in Croissants!

A nice Open even internal texture shows good process control and particularly good preparation of butter and incorporation into layers with the pastry.

When this is combined with proper fermentation you get this lovely inside structure which it’s wonderful to eat and helps the crust have great flakiness.

Today, we remember the sacrifice and hardship ANZAC soldiers endured to protect the country we all live in.

Baking was a big part of the war efforts as they ensured the soldiers were feed and able to fight for our country.

Here is a collection of images from Argus newspaper collection of war photographs. World War II titled: Army baking in the field bakery, Australian Army Service Corp

With the Image Collection information stating: the process of bread baking including moulding and tinning, cutting into the huge mass of dough, loaves coming out of the oven, stacking the bread ready for distribution, Sgt. A. B. Hill, the chief baker handing over the day's supply for a local camp.
