Three years ago, my children introduced me to Hat Creek Burger Company while Jeff and I were visiting Waco.

I’ve been back many times since.

Yes, the gluten-free options are a big reason why.

But what keeps me coming back is something much simpler.

It’s one of those places where everyone in the family can find something they enjoy while the grandchildren play nearby.

One of the simplest things that’s helped me eat gluten-free without feeling overwhelmed?

I let ChatGPT help me meal plan.

If I already know what I’m craving, I’ll usually flip through one of my favorite cookbooks or search Pinterest for inspiration. But when I’m trying to use what I already have at home, ChatGPT is my go-to.

Every week I tell it what’s already in my fridge, freezer, and pantry, then ask it to create gluten-free recipes using those ingredients.

It saves me time, reduces food waste, and usually means fewer trips to the grocery store.

Here’s a prompt you can copy:

“I eat gluten-free. Here’s everything in my fridge, freezer, and pantry. Create 5 healthy gluten-free recipes using what I already have, and make me a grocery list for anything I’m missing.”

Whether it’s a cookbook, Pinterest, ChatGPT, or Gemini, the goal is the same: make gluten-free living a little easier.

A lot of people see the recipes, the cakes, and the finished bakes.

What they don’t always see are the hours spent learning, researching, testing, and writing.

Lately, I’ve been working on something I’m really excited about—a resource for people who are just beginning their gluten-free journey.

When I first started, I had so many questions and spent a lot of time figuring things out through trial and error. My hope is to make that path a little easier for someone else.

Coffee shop afternoons, notebook pages, and lots of gluten-free conversations later… it’s slowly coming together.
