Experiment #1 with the canned wheat from Saturday was burger buns for the house today. 🍔

Here’s the test batch fresh out of the oven. Nutty richness, a soft crumb, and so far everyone has given it a thumbs up already. 👏

Next experiment: a small batch of rustic sourdough loaves made with the same wheat. Stay tuned.

👀 Something special is coming to next week’s market…

Our precious friend and wheat supplier, Catherine Laughlin dropped off this canned hard white wheat from 2010 at the market today. 🌾🥖

Yes… canned wheat.
Yes… beautifully preserved.
And yes… we’re turning it into sourdough.

We’ll be experimenting with this and bringing a limited batch to the market next week for everyone curious about how aged, properly stored wheat performs.

If you love heritage grains, fresh milling, you’ll want to stop by.

You might notice our whole wheat bread looks a little lighter 👀

We’re using more hard white wheat from our local supplier instead of red. Same fresh-milled flour, same process, just a milder flavor and lighter color.

And as always, no chemicals used in the wheat 🌾
