Sunday was our last pastry bake day until 9/13. Im heading to Maine to celebrate my birthday and taking September a bit easy - I still need to finish our 2025 taxes, work on a few creative projects, and rest a bit extra before October wedding season and then Thanksgiving and Christmas season hit us in the face.

We were truly blessed on Sunday with extra hands, when I could added 4 (!!!!) specials to the menu and made family meal. It’s always hard for me to switch between production and creative mode, and as someone currently going through ADHD diagnosis as an adult, I never wanted being able to bake for more of you to dull the joy and impulse of putting new pastries and flavor ideas on the menu. We are not perfect and our pastries will continue to get better, but know that every bite was designed with so much love and care.

My favorite bite from Sunday was likely the Jalapenos Corn Bread Donut and our gluten-free Buckwheat Chocolate Cake. I hope you enjoyed this nice weather, and dont forget to get yourself a treat often!

Corto Olive is bringing the freshest extra virgin olive oil, grown and harvested in California, to our BREAKING BREADS party! Did you know that Olive oil is essentially a fresh-squeezed juice (because olives are a fruit!), so freshness matters!

Our friend Sarah at District Bread - a gluten free bakery is killing it in the gluten-free bread game, because you shouldn’t miss out on your favorite toast or sandwiches if you have to live gluten-free. We’re particularly excited for their sourdough!

Emily of Female Rage Hot Sauce will be bringing the heat! The Brown Sugar Peach flavor is destined for a great burrata sandwich or a fancy grilled cheese 🧀

PB&J is as classic as they come, and while Jill Nguyễn | Capitol Jill Baking™️ is in charge of the jam bar, we had to invite One Trick Pony to the party! Their crunchy PB is a staple and the jar design is pure genius. You might find us in the corner with a little plate of just peanut butter and hot sauce on toast

We are picky about dairy as baker and cheesemonger, and we both agree that Vermont Creamery’s award-winning cultured butter is the best. We will have so much whipped butter around for the party!

I forgot to take a Sunday pastry tray photo today, mostly because we were so busy and I got very focused figuring out our next kolache. This Elote-inspired one is truly a winner, and I'm so happy a few of you got to try them today before we roll them out to the full menu next Sunday!

Sourdough brioche, crema-inspired custard (a little tangy), sweet corn, onions, pickled jalapenos, tajin, lime, cilantro, with a just a bit of bread crumb.

I’m not a very patient person.

And that is not a good thing as a bread baker, given that time is an essential ingredient.

After a few weeks of finicky sourdough days with 7”% humidity and 90F heat, I had to force myself to take it slow with the dough. Patience really paid off - just look at this week’s loaves.

Some quick tips for baking sourdough breads in high summer:
- don’t skip autolyse. Even 30 minutes make a difference.
- refresh starter at higher ratio. Im currently feeding 1:25:25 the night before a bake.
- mix with colder water, like ice cold. In the summer I want a 75F dough temp post mix, and using ice is the only option.
- shorter mix time, esp with bigger batches
- cut bulk early (3 hrs here), and longer bench rest
