It's a new month and I have gained a ton of new followers since I did one of these so I thought it would be a good time for another reintroduction post!

My name is Kaitlan and I am the owner of Best Day Ever Bakeshop! I launched at The Railyard on 66 at the beginning of the 2025 season starting with just a pastry case inside the bar and now just over a year ago, I got my food truck so I could have ice cream and moved the pastry case in there 🥰

I've been decorating custom cakes for over 10 years and have worked in various other bakeries before opening my own shop! I absolutely love doing custom cakes and being part of your family tradition every year.

I also do custom cookie cakes, cupcakes, buttercream sugar cookies and those big ass oatmeal cream pies haha.

I am open every day that the Railyard is open (currently Thursday - Saturday) but have the capability to pull the truck to other events!

I am a 1 woman operation so some days can look like picture 2 when a lot is going on and you arent paying attention 😂 there is so much work that goes on behind the scenes but it is a labor of love ❤️

Best Day Ever is named for my husband who passed away almost 3 years ago and he said the day we met was the "Best Day Ever!". He didnt live to see the business come to fruition so I thought this was the best way to honor him ❤️

I am absolutely BLOWN AWAY by how amazing the Foodie Festival was! For once, we had great weather and it was by far the busiest 2 days of sales I've had and I cannot thank you enough!

In just 2 days I went through nearly 500 individual baked items and 30+ gallons of ice cream 😲

And you may have even been lucky enough to see Grazing Guse stop on by on Friday night!

I am so very grateful for an amazing weekend, thank you thank you thank you!

Quick 3pm update! Its been very busy and a very pastry heavy day so I will more than likely sell out of pastries by the end of the night! I have tons of ice cream as always but just wanted to give a heads up!

Wow, last night was an AMAZING start to the 217 Foodie Fest at The Railyard - Springfield, IL ! The fun continues alllll day today from 11am - 9pm and today I will have some peach blueberry crisp available 🤤

The case is going to be FULL and stocked up but when it's gone today, it's gone! I made a whole new batch of oatmeal cookies this morning because not one crumb was left lol.

I can't wait to see everyone today! It's going to be an amazing day ❤️
