🌾 WHY FRESHLY MILLED FLOUR?
You may have noticed freshly milled options popping up on our menu lately, and we wanted to share a little more about what makes them so special!
First things first — we’re incredibly intentional about the ingredients that go into ALL of our baked goods. Our traditional sourdough is made from scratch using quality, simple ingredients and long fermentation. Freshly milled flour isn’t about replacing that — it’s about taking things one step further. 🤎
So, what’s the difference?
Most flour is milled well before it ever reaches your kitchen. With freshly milled flour, we start with the whole wheat berry and mill it ourselves right before baking. Because the entire grain — bran, germ, and endosperm — is included, the flour retains the naturally occurring fiber, oils, vitamins, minerals, and other nutrients found within the whole grain.
And there’s another reason we love it: FLAVOR. 🌾 Freshly milled grains bring a depth and richness that you just don’t get from flour that has been sitting on a shelf for months.
We don’t believe good food has to be all or nothing. Our goal has always been to make delicious sourdough with simple, thoughtfully chosen ingredients — and incorporating freshly milled grains is just another way we’re continuing to learn, grow, and bring something special to your table.
