Family bakery. We only use freshly milled organic flours, gray sea salt rich in flavor and minerals, water with the perfect balance of temperature and purity (free of chlorine and unwanted minerals), and 20+ year levain. All mixed in a studied environment to allow these natural elements to work together in harmony. All our loaves are hand-shaped and placed on flax linen (couche) for long fermentat

ion. This allows the ingredients to “organically” and slowly work together to produce breads rich in flavor and aroma. This long fermentation/panification process, allows the natural acids to work in harmony, creating especially unique breads that enhance the taste of the food/wine that they accompany.

💔 The Goguette Family is heartbroken by the passing of Giampaolo from Riviera Ristorante.

From the very beginning of our journey over 10 years ago, he welcomed us with kindness, warmth, and generosity. His gentle spirit and genuine care for others left a lasting impression on everyone fortunate enough to know him.

Some people come into your life and become so much more than friends—they become family.

Tonight, and for many nights to come, we will raise a glass in his honor and celebrate the beautiful legacy he leaves behind.

Born in New York in 1874 as a high-end hotel alternative to toast, we’re bringing that heritage back with a French twist. Every Saturday at Goguette Bread, we’re baking these gems using 100% levain (no commercial yeast!) and a blend of ancient grains. 🌾✨

The result? A deep, complex tang and those legendary nooks and crannies, all baked to perfection in the oven.
