These doughs were mixed with fresh-milled organic grain, shaped by hand, and are beginning their long fermentation for the Dunedin market.

We stone-milled the organic grain ourselves, slowly fermented the dough overnight, and baked it fresh for market morning.

It’s our Millstone Reserve—a rustic French country-style loaf inspired by the village bakeries of another era. Crisp crust, rich flavor, and made the way bread was before preservatives and industrial flour became the norm.
