Reducing sugar in your cake is not as simple as “less sweet = healthier.” Sugar actually plays several IMPORTANT roles in baking, so when you reduce it, your cake will behave differently.

Here’s what you’ll notice:

1. Your cake becomes drier
Sugar attracts moisture. When you reduce it, your cake loses some of the softness and can turn out dry or crumbly.

2. The texture becomes tougher
Sugar helps to tenderize gluten. Less sugar = stronger gluten = a firmer, sometimes rubbery texture.

3. The cake won’t rise as much
Sugar helps trap air during creaming. Less sugar means less aeration → a denser cake.

4. Flavour becomes flat
Sugar doesn’t just sweeten; it enhances flavours. With less sugar, your vanilla, chocolate, or fruity notes may taste dull.

5. Shorter shelf life
Sugar helps keep cakes moist longer. A low-sugar cake will dry out faster.
