Rakkaus Brewery & Bakery was founded by Evan Matteson in 2011 after 3 years of homebrewing. Evan grew up cooking as a child and carried his love of scratch food creations into college, often hosting dinner parties with friends. Since 2020 brewing and scratch cooking has expanded to include health focused items such as kombucha and fresh milled flour baked goods. Located in Rockwall Texas, Rakkaus

(pronounced rak-kaus, or in Texan, rock-house), brews award winning Ales, Lagers, Cider and homemade Ginger Beer AND added on amazing Kombucha in 2023 and fresh milled flour Baked Breads and more! Although geographically focused on Western to Northern European stylistically, the occasional Caribbean or Mexican styles sometimes surfaces on the beer side of things while fresh milled flour baked goods are generally European in style. Evan Matteson enjoys the context that history provides. A Finnish word was chosen as a representation of Evan’s family lineage from Northern Europe, his great grandfather, Erick Matsson. Rakkaus means LOVE in Finnish and was chosen for it’s multi-layers of significance as a word. I Corinthians 13:13 says, “And now these three remain: faith, hope and love. But the greatest of these is love.” This verse abides near the end of a letter that Paul wrote to the followers of Christ in Corinth around 57 AD while he was in Ephesus (a city on the west coast of today’s Turkey, about 180 miles away). The Corinthian church contained Gentiles but also some Jews and Paul wrote to them because the peace of this group was being disturbed by false teachers and ideas.* He spends time lovingly correcting false doctrine and exhorting them to follow the truth. In what is known as chapter 13, he speaks about the necessity and advantage of the grace (getting that which you do not deserve, as apposed to mercy, not getting that which you do deserve) of love. God’s love of us, our love of others and a love for what we do, the craft of brewing, inspired the brewery’s name. Rakkaus Brewery & Bakery. Every time we start a new brew or bake, it is performed with acute attention to detail; anticipating the future moments in life that family and friends will share over a few pints or loaves of Rakkaus-made goodness.

Gretel's Milk Stout and Packer's Gose are in the fermenters...always love the milk stout...but especially excited to have a gose again...it was 2010 or so last time this was made.

Starters for the next two batches...Rakkaus Goat 3.0 (Czech Dark Lager) and Rakkaus Dopplebock. Did you know starters can increase your brewing yeast cell count by 4-6 times? Make sure you don't under pitch your yeast and always make sure to increase your count for lagers...they need double or more than ales do.
