⚠️⚠️Well guys, I’m sorry for the inconvenience… I’m going to have to cancel this week’s fudge party. So don’t head to the porch today☹️
Sometimes things don’t go as planned in my baking world and these two fudges are a prime example. However I’m pretty sure I know what the culprit was to cause these two to fail. My candy thermometer. And it’s BRAND NEW and the top of the line digital!! So back to the drawing board with a different thermometer and I’ll try again for next week. I’ll add what went wrong with both fudges HOWEVER the flavors of these are the best I’ve ever had!! PS… I’m the world’s largest sucker for caramel and have tried so many different caramels around the world. I can proudly say this caramel is hands down one of the best caramels I’ve ever had, let alone make myself!!
Peanut Butter: During the fudge base stage my thermometer finally went off with the temperature well over my targeted temperature. During the whipping stage and adding the peanut butter, this caused the peanut butter to immediately crystallize the base.
Pralines & Cream: during the fudge base stage my thermometer acted up again and gave me a false temperature read. And it was actually under the target temp. During the whipping stage it acted beautifully however, It. Never. Completely. Set. Up. So now I have it in the freezer to firm it up so Mr H and I can still eat it because this flavor IS TO DIE FOR!!
I am going to do these two flavors next week and add a third one that will be a surprise flavor!! Don’t give up on me yet! I’m determined to learn this old fashioned method.
