Hi, SICC followers! Hope y’all doing great! 🍪

Sometimes we tend to believe everything we read without testing it ourselves, but experience can teach us otherwise.

The structure of royal icing is incredibly important when it comes to achieving volume and stability, and avoiding overmixing during preparation is essential for that result.

Just look at the volume on these cookies! 😍

This icing had been stored in my refrigerator for 2½ weeks and then rested one additional day on my kitchen counter to come to room temperature.

It’s a great reminder that learning how to truly master your royal icing can make a huge difference in your cookie decorating success. 😉

This sweet creation became a reality thanks to the Easter 2026 Collaboration created by Jackye’s Desserts and Cookies Art, where several cookie artists create an Easter-themed cookie.
