If you’ve ever had to ask whether the fries share a fryer with the breaded stuff, Veg.edible is your new spot.

Everything out of that kitchen is vegan, gluten-free and nut-free. The smash burgers, the crispy oyster mushroom chick’n, the loaded fries. The bakery case too, and every cookie, donut and celebration cake in it is soy-free on top of that. So you can just order without scrutinizing ingredients.

Stacie Van Cleave and Matt Hyde opened it in Benson in 2021. It’s won Best of Omaha for Gluten-Free Menu three times since.

They also run their cardboard recycling and trash pickup through us, a local hauler, when a national company would’ve been the easy call. Their takeout boxes are compostable, too. Which pairs well with our residential Compost Club program.

Thanks, Stacie, Matt and crew. We appreciate the local partnership and you giving Omaha a much-needed food option.

Our 2026 Thanksgiving Menu is officially OPEN for preorder!

- Preorder will stay open until Friday, November 20; however, some items may sell out before then

- All pick ups will be scheduled for Wednesday, November 25 from our kitchen on 85th and Blondo; no delivery offered

A couple changes this year:

- We’ve replaced the GF Autumn Squash Medley with a GF Candied Autumn Squash Casserole

- NONGF seitan is no longer on the menu

- All Thanksgiving family meal deals are gluten free this year!

- Extras outside of the Thanksgiving menu will not be available the week of Thanksgiving; we apologize for the inconvenience!

The Omaha restaurant with the best no-food-waste protocol we've seen is Rooted Table Cafe. Here's why this cafe is one of the most delicious and eco-friendly in the city ...

The Countryside Village Omaha cafe is fully vegan and from-scratch, and runs on flexible portion sizes, so you eat what you order.

Here's how it works there:
- Carrot tops become cold-pressed juice
- Broccoli stems go into soups
- Day-old bread becomes croutons
- No meat served, so ingredients are low-carbon intensive
- To-go orders come with compostable silverware
- Local farmers turn their scraps into compost and animal feed
- Glass gets recycled
- Hard-to-recycle plastics go in Hefty ReNew bag
- Everything else gets composted with us at Soil Dynamics or recycled at First Star Recycling

And this is pretty unique as well: You don't have to figure out which bin is which, either. Their front-of-house team clears your table and sorts all of it: food, recycling, Hefty ReNew items, and compost, so everything ends up in the right place.

Let's give a big round of applause to Rooted Table for setting a wonderful example of what a healthy, eco-friendly food experience can look like in our city.
