🌮 MARKET DIARIES: WAFFLE TACOS ARE BACK 🌮
Last night was my official return to the Oceanside Sunset Market with waffle tacos.
I’ll be honest… the numbers weren’t what I expected.

I also ran a Memorial Day special and lowered my waffle tacos from $10 to $8, which definitely affected my average ticket.
But numbers don’t always tell the whole story.
I was surrounded by ice cream vendors, dessert vendors, and plenty of competition. Yet people kept stopping to watch me make the waffle tacos fresh right in front of them.
One of my favorite moments of the night was when a local food influencer stopped by and tried my Biscoff Cookie Butter Waffle Taco. His reaction was priceless.
Later, another vendor came over and told me he couldn’t stop talking about the waffle taco and had no idea I was making everything completely from scratch.
That’s the part that stuck with me.
Not the sales.
The fact that people remembered it.
The fact that they talked about it.
The fact that they understood this isn’t just another dessert booth.
And what most people don’t know is that I almost didn’t get into the market at all. As a non-permanent vendor, I wait and hope for an opening. A spot became available around 10 PM the night before, and I grabbed it.
So while this wasn’t the night I envisioned financially, it was a night of introductions.
The waffle tacos are back.
And Oceanside is starting to notice.
