OUR STORY
The Schat Family started its long line of bakers in Utrecht, Holland in 1893. In 1958 Jack Schat Jr. (Paul’s Uncle) was able to sponsor his father Jack Schat Sr. and his mother Kine(Paul’s Grandpa and Grandma), to the United States. The Schat Family came over in search of the American Dream. The Schat Family bought a bakery in Bishop California. Together with their children, they baked f
ine European baked goods. The bakery grew and grew. Eventually the family was known throughout Southern California. The Family responded by building a 35,000 sq ft. wholesale bakery. Soon they were filling the shelves of Safeway, Vons, Boys, Certified and Albertsons markets with over 65,000 loaves per day. Paul was born in Bishop, California and grew up in the bakery. He trained directly with his Grandpa Jack, his father and uncles. During his college years, Paul traveled to Europe and worked at the family business in Utrecht and Zeist as well as other bakeries in Venlo. Paul bought the Mammoth Bakery from his uncle in 1989. The Mammoth Bakery had been supplied by the wholesale plant in Bishop but in the summer of 1989, Paul remodeled and put in full baking production on site at the Mammoth store. Paul and Cheyenne enjoyed many years of growing the bakery business in High Sierra mountain resort but after many years in the snow, they were ready for change. With a love of the Carson Valley area and hopes of opening a bakery in the Minden and Gardnerville area, Paul and Cheyenne moved to Carson Valley in 2005. The Minden project kept hitting hurdles and setbacks but, in 2009, the Carson Mall approached Paul to open a new bakery. Paul Schat’s Bakery opened in October, 2009. For many years, Paul and Cheyenne, along with their children Sedona (daughter) and Isaiah (son), trucked bread and pastries to Farmers Markets in Reno, Sparks, and Minden. Along with their dedicated staff of Paul Schat’s Bakery continues to provide their customers with the same quality and freshness that has been the hallmark of Schat’s baking for over 100 years. Paul and Cheyenne’s dream to open a new bakery in Minden is now coming to fruition. With the help of Isaiah, they are thrilled to be opening in a new location, Schat’s Bakery and Restaurant, in Minden, Nevada in late 2020. Last year, Isaiah followed in his father’s footsteps and traveled to Europe and learned about the family-trade. Isaiah has worked in multiple bakeries learning and loving his way into culinary including Gayle’s Bakery & Rosticceria in Capitola, California.
