We were incredibly honored today to have had the master himself in the bakery facility in the City of South Milwaukee to put the new lamination room (and us) through our paces!!

Chef Paul Bartolotta and his senior chefs, Chef Pascal Piermattei and Chef Aaron Bickham stopped by to tutor us on a new technique/item.

Chef Sean Cassel and I did our best to keep up. Sean did a great job!

Afternoon Foodies!

Instead of leaving the office this evening and sitting on I-94 going nowhere, staring at Milwaukee Brewers Stadium. Pop down to Amilinda on Wisconsin Ave for a drink and the most amazing sandwich ever — made on freshly baked North Shore Boulangerie Papo Seco bread. It just came out of the oven and is heading downtown now!
