Sometimes the best desserts begin with a simple idea… and a little curiosity. 🤍

I wanted to create something that felt familiar, yet completely new — a dessert with the comforting character of a honey cake, but with a brighter, fresher personality.

So this long honey cake was born. ✨

Soft honey layers are paired with a delicate cream, while a berry filling adds a beautiful touch of tartness and keeps every bite from being overly sweet. On top — fresh blueberries, little clouds of cream, and chopped pistachios for just the right amount of texture.

I especially love the moment when you cut into it. From the outside, you see those warm honey crumbs and elegant decoration… but inside, the berry center appears — juicy, vibrant, and slightly unexpected. 🫐

This is one of those desserts where every element has its purpose:
the warmth of honey, the softness of cream, the freshness of berries, and the delicate crunch of pistachios.

A little rustic. A little elegant. And made to be shared around the table. 🤍

A little secret from my Ukrainian kitchen… sometimes tradition becomes even more beautiful when you allow yourself to play with it.

A super-thin, crispy watfle rolled while warm around creamy pistachio-kunafa filling, then coated with glossy milk chocolate. That crunchy shell + creamy pistachio center is seriously addictive! G
Would you try this Dubai-style dessert?

Ingredients
For the thin waffle rolls
* 60 g egg whites
* 60 g icing sugar
* 50 g melted unsalted butter
* 50 g all-purpose flour
* 2 g vanilla
* 1-2 tbsp water or milk, only if needed to achieve a very thin batter

For the pistachio-kunafa filling
* 100 g pistachio paste
* 60 g melted white chocolate
* 50 g heavy cream
* 60 g toasted crispy kunafa, finely chopped
* 25g chopped pistachios
* Pinch of salt

For chocolate coating
* 180 g milk chocolate
* 10 g neutral oil
* 180 g milk chocolate
*10 g neutral oil

Method
1. Whisk egg whites and icing sugar until smooth.
2. Add melted butter and vanilla, then mix in the flour.
Make a smooth, thin batter.
3. Preheat a long rectangular shallow waffle maker. Use a small amount of batter and cook until you get an ultra-thin 1-2 mm crisp waffle sheet.
4. Remove the waffle while it is still warm and flexible.
5. Place a thick strip of the prepared pistachio-kunafa filling at one short end of the waffle.
6. Immediately roll the waffle lengthwise from the filled end toward the opposite end while it is still warm. Do not cut or fold it.
7. Repeat to make six rolls.
8. Melt milk chocolate with neutral oil until smooth and glossy.
9. Drizzle the chocolate over the rolls and sprinkle with chopped pistachios.
10. Let the chocolate set slightly, then cut one roll in the center to reveal the crispy wafer and creamy pistachio-kunafa filling.

There are desserts you learn to make… and there are desserts that feel like home. 🤎

Ukrainian Walnut Cookies — Horishky (Горішки)

These little walnut-shaped cookies are one of those childhood flavors I could recognize with my eyes closed. My mom always made them — golden, delicate shells filled with rich dulce de leche / caramel cream. And, of course, there were always a few little tricks that made hers special.

I remember watching her bake shell after shell in the old walnut mold, trimming the edges while they were still warm, saving every little crumb for the filling, and trying to make each “walnut” perfectly full.

Years later, when I moved to the United States, I brought my mom’s horishky mold with me from Ukraine. ❤️

It may look like just an old baking pan, but to me it carries so much more — my mom’s hands, our kitchen, the smell of freshly baked cookies, holidays, family gatherings, and a little piece of my childhood.

And now I make them here.

Same mold.
Same little tricks.
Same recipe filled with memories.

One of my favorite tricks? Never throw away the trimmed cookie edges. Crush them finely and mix them into the caramel filling. They give it that beautiful texture and make the filling taste even richer.

Another secret is to fill the shells generously and let the assembled horishky rest. After several hours, the filling and cookie become one — tender, buttery, caramel-y and absolutely irresistible.

Funny how something as simple as an old baking mold can travel thousands of miles and keep a family tradition alive.

A little secret from my Ukrainian kitchen: sometimes the most precious recipes aren’t written in a cookbook. They are passed from a mother’s hands to her daughter’s. 🇺🇦🤍

And every time I make these, I feel like Mom’s kitchen is just a little bit closer.
