Made some changes to my cookie recipe. I wanted a thicker and chewier cookie so I switched it up. Much happier with them. They’ll be available at the farmers market tonight!

What’s up everyone!

Here is the schedule for the week, pretty much just in the shop downtown and at farmers market. Just a reminder that farmers market is focaccia and cookies only. Im not doing pizzas at farmers market. Also, if you want to guarantee yourself a loaf of focaccia or a pack of cookies then you have to place an order by tomorrow night. Otherwise it’s first come first serve. Link to order is below.

It’s farmers market week! I can’t believe we’re already coming into summer.

Just wanted to let everyone know that I will be selling focaccia and cookies at this years farmers market. My booth WILL NOT be in the same space as last year. We’re now setting up our booth in front of Tandem bikes & brews.

Also wanted to announce that starting next week we will be selling slices and sandwiches at our mini slice shop inside of Tandem three days a week. I will be there Wednesdays, Fridays and Saturdays from 2-6 and in the farmers market booth on Thursdays.

Thank you all for your support during this transition into my new space. It’s been a chaotic and stressful few weeks but I’m excited to finally have a single space to bring you pizza, focaccia and sandwiches every week.

For the past couple of months, I’ve been hinting that there’s been a lot going on behind the scenes and that some big announcements were coming. Well… here it is.

Defiant Baking Company is moving to downtown Lodi!

That’s right. My new home will be on School Street. We’re teaming up with our good friends at and to bring you pizza by the slice, sandwiches, focaccia, and other baked goods.

We’re not quite ready to open just yet, but equipment has started moving in, and it felt like the right time to share what’s coming. We still have a few things to get squared away, but I’m hoping to be up and running in the next few weeks.

In the meantime, I hope to see you at our pop-ups.
