This is why my bread has the flavor it has- long cold proof before being baked just before you pick it up. That long fermentation helps eat that gluten, and makes it easier for us to digest. That’s also more than 200 lbs of dough in those refrigerators!

I’m getting a bit of my creative spark back. Today at Lilburn Farmers' Market I’ll have my great grandmother’s pickles and onions available! I also made croutons! They’ll be cheap.
