One of the things that people say about Filipinos is, we have a lot of patience. It reflects a lot when it comes to our food and as most of you, mga kapamilya, know that our dishes takes a lot of preparations and steps, or you will hear one of us (the cooks and bakers, AHEM!) say: Mabusising gawin!
Which means, it will take a lot of time, in short, you might convince me to make you one but after that, maybe never again or if you are lucky, when we feel like it.
Filipinos are not naturally Vegan per se but we do love our veggies. Once in a while a dish that is mabusisi will pop up. Meet Mechado. A braised thick tomato base stew with veggies and whatever meat you have (most of the time beef). After all that prep work and screwing for hours on low fire until everything is tender that would melt in your mouth, you would think it's time to dig in with a steaming fresh heaping mound of rice.
Oh no. You can eat that tomorrow.
That's right. TOMORROW. So you can expect someone from thw kitchen to yell at you if you try to take some. Why tomorrow, because you have to let it rest, then let the flavors meld together so it's stronger and more vibrant.
