POV: It’s 12AM and the eggs aren’t separating themselves.

Every macaron shell and every crème brûlée starts right here with fresh eggs, patience, and a whole lot of love.

Before the beautiful colors, before the crunchy tops, before the perfectly caramelized sugar there are hundreds of egg whites and yolks being carefully separated by hand.

The things you don’t see are what make the difference.

Egg whites for macarons

There was nothing quite like walking out to my pecan tree and gathering fresh pecans straight from the source for my Butter Pecan and Bourbon Pecan macarons.

Those fresh-picked pecans added a little extra Texas magic to every bite. My tree is taking a break right now, but I can’t wait until it’s loaded with pecans again so I can bring that fresh-from-the-tree flavor back to my kitchen.
