Good Wednesday morning, it’s still dark outside and the only thing that I saw on my into work was the reflection of my car lights on a raccoon family that were by the side of the road, Mama and her babies didn’t mind me stopping to watch them as she got them all to safety, I love raccoons and their playful nature that I get to see some mornings.
I had to take this picture, Danny had just pulled his croissants from the oven and they are stunning, the layers are sitting proud and they are crackling as they cool in the bakery. Such beautiful work.

Good Tuesday morning, it’s a beautiful bright blue sky and so many birds were practicing their dawn chorus as I left for work. The garden is growing and we will soon have a generous bounty of fruit and veggies available.

Good Saturday morning, we will be at and this morning. The bakery is also open and our cases are full of cakes and pastries. Our beautiful croissants, chocolate croissants, almond croissants and Pain au Suiss are available and look beautiful, the flavor of the fermented butter is so good and the layers are popping. Try one for breakfast or give one to a friend!
