This weeks’ lesson is that not all flours are equal just because they are called the same. It’s not that I didn’t already know it, but I didn’t think it would be quite as bad.

So my advice to anyone wondering if saving some money is worth it is this: If you have identified a brand you like that gives you the result you are looking for, stick with it even if it’s more expensive. There is most likely a reason for the added cost.

Now to decide what to do with 40 pounds of dark rye flour, short of tossing it.

January has been an exciting time in the Bloom kitchen. I’m excited to share that I have started a collaboration with the Deutsche Samstagsschule in Houston (a non profit that offers German language classes to kids and adults). Many of the parents are German expats and miss access to German bread and rolls. So every two weeks or so I will be baking through the night to bring fresh bread, rolls, and pretzels to the school.
A special thanks to my husband for his support. He’s washing lots of dishes, weighing out dough and has learned to shape dough balls. Not to mention luggs the flour bags and fixes broken down mixers.
I’m looking forward to what this year has in store for my little bakery.

We just finished performing Mary Poppins at my daughter’s school, which made me think of making letter cookies. I usually do not use food coloring, but in this case it seemed appropriate. I opted for Watkins All Natural Food Color, which uses vegetables and spices for coloring. This is my first attempt ever using food color. I’ll never be a super super cookie decorator, but this was fun and the cookies are quite tasty. Now to get the song out of my head…

Brezeln just in time for Oktoberfest. These are not as beautiful as the ones from my hometown bakery, but they still taste great.

Keep in mind that I’m from Wuerttemberg. Our pretzels don’t look like the ones you get in Bavaria. We want ours with a big belly. Still trying to figure out how to get the ‘windows’ to be bigger.

This is the season for Siedegebaeck - deep fried pastries, essentially a form of donut. This is especially true in those regions that celebrate Fasching or Karneval (depending on the region in Germany). I don’t really know if it’s the cold weather or the Fasching Season that made Siedegebaeck popular this time of year.

Requested by a friend, I tried my hand at Berliner, also called Krapfen, Kreppel, and particularly in Berlin - Pfannkuchen. Another proof that food is very regional in Germany.

In all honesty, I think a Berliner is just a glorified Jelly Donut. It’s less sweet though, and the jelly is real jam and usually just rolled in regular sugar. The shape didn’t come out quite right. They shouldn’t look like a ball, which mine turned into once I put them in the hot grease. Something to work on. But I’m told they were very good and that’s what matters most.

Now that the holiday season and related eating is behind us I’m trying to get back to a more balanced diet. To me that mostly means more fiber, less processed sugar. No more cookies or Lebkuchen for breakfast.

With that in mind I made a batch of Granola - old fashioned oates and almonds tossed in coconut oil and butter (I know, one could argue butter doesn’t fall in the better diet category, but moderation is the key in my world), honey and palm sugar, 30 min in the oven and it’s done. Break up into clusters and add whatever dried fruit you like. In the spirit of cutting back on sweets, I omitted the chocolate chips. Tastes great with yogurt and some fresh berries and it keeps you full for hours. I’m not against store bought granola. It’s convenient. Some are actually pretty good, but this is better😀.

This year it’ll be 30 years that I moved to the US. This was before ‘artisan’ bread was a thing. Mostly all you could find was fluffy presliced bread and hamburger buns. That and Bagels. Bagels were the closest thing I could find to a German Roll and I love them. Not the store bought kind, but the fresh ones from the Bagel Shop, which are lots of in the Twin Cities where I first lived. For some reason in Houston, they are not as common so I turned to baking them myself. I don’t make them often, the dough is tough to form and the whole boiling process is a chore, but lately I’ve had a craving so today was the day. Pop what doesn’t get eaten today in the freezer and it’s a quick breakfast during the week.

It’s been a cookie marathon the last four days, but I’m ready to call the first round done. This will take care of some orders and gifts.

The Schokladienchen were a challenge this year. I made them the first time last year and everything worked like a charm. It took me four tries to get the egg from not curdling and the solution was essentially to forget about the temperature instructions and to just follow my gut. I guess that’s what I did last year? It was pure stubbornness that I didn’t stop trying after the second batch ended in the trash.

Next week we celebrate Thanksgiving and I usually start with Christmas cookies the following weekend in time for the 1. of Advent. This year I was antsy to try out a few new recipes so I spent the day in the kitchen just for fun. I tried 4 recipes, two with marzipan, one with coconut, and one with Ba**er. The only one I’m not sure about is the one with the Ba**er. The baking instructions seemed to be wrong. Even though I did come up with a fix for it, I think they are too sweet for me. But they’re cute so I might try them again. The other three were amazing and are keepers for sure. Comments under the photos.

This lead me to make Kaesebroetchen today. My customers feedback was that they were spot on! No better compliment than that!

This time of year - fall and cooler temperatures - always makes me crave Zwiebelkuchen. It is a staple during Kirbe (my hometown’s fall festival). All that is missing is some sweet new wine and a stroll through the Kirbemarkt.

I know it doesn’t look like much, but it is delicious assuming you like a lot of onions.
