Hey Ya’ll - I just have to share this recipe!
This is the BEST Cake!

Banana Cake
Moist - soft and so delicious

Ingredients:
1 1/2 cup Milk - i used evaporated milk (which is equivalent to a can but do not use the fat free kind)
2 1/2 Tbsp of lemon juice
4 -5 Medium ripe bananas mashed
2/3 cup butter, softened
1/2 cup brown sugar
1 cup granulated sugar
3 large eggs, room temp.
1 tsp Mexican Vanilla
3 cup (360 grams) of flour - note: i weigh my flour not measure. I used 120 grams of cake flour and 240 grams of king Aurthur Organic unbleached AP
1 1/2 tsp Baking Soda
1/4 tsp salt - I used iodized Salt (not sea salt or kosher)

Frosting:
4 oz softened cream cheese
4 Tbsp softened butter
3 cups of powdered sugar
1 tsp Mexican vanilla
1 1/2 tsp Lemon Juice (I used bottled)

These measurements were how I ended up making because instead of a 13x9 cake I decided to make Two 9 inch Square pans so I could freeze one Cake to frost at a later time.
When I found the original recipe the measurements for their frosting was for a 13x 9 pan as were their instructions - frosting measurements from original - pictured in the comments. I never make a recipe I find AS IS. I always make it mine!

Instructions:
Preheat oven 350 F
Grease and flour - or like I do - parchment and bakers joy 13x9 ( I used two 9 inch square pans but two 8 inch would have been a lot better)
Add 1 1/2 Tbsp of lemon juice to 1 1/2 cup milk and set aside - I used bottled lemon juice and a can of evaporated milk
Mash bananas and add remaining 1 Tbsp of lemon juice and set aside
Beat butter and sugars until blended
Add eggs one at a time and then vanilla
Mix on high until light and fluffy texture resembling frosting
Combine dry ingredients - whisk together to combine - and alternately add to egg sugar and butter batter with Milky mixture (alternately you can use buttermilk here instead)
Stir until combined but don’t overmix
Fold in banana mixture and pour into prepared pan (s)
Place in oven and reduce heat to 300 - bake 45-60 min depending on oven and pans - when toothpick or cake tester comes out clean - cake is done
Do not over bake.
Remove from oven cool on wire rack or cool in freezer for 45 min to make cake extra moist - I did not follow that step / I find it unnecessary. I cooled in pan for a few minutes and since I lined with parchment I was able to remove easily to cooling racks to cool longer.

About an hour later I mixed up frosting ingredients with a hand mixer and frosted one cake and had with tea for dessert.
The other cake once cooled completely without removing parchment I wrapped well with plastic wrap - then. With heavy duty foil and placed in the freezer to defrost and frost at a later time.

This cake was perfect. The lemon in the frosting cut the sweetness down and gave it that extra something all frosting needs - the cake was soft and moist. I placed the remaining frosted half in an airtight container in the fridge. I sliced it this afternoon to see how it tasted cold and OMG even better!
