I love the outside, but the best part of this wedding cake is the inside: lemon cake with raspberry filling!

This one also took some special effort. The cake layers went in my carry-on, and then frosting, filling, assembly, decorating, and delivery took place in Salt Lake City!

Sharing my favorite cake on our 4th Birthday! Berries and Cream: a tender vanilla sponge cake with fresh berries and a mascarpone whipped cream. It's so,so good!

And it's time for the story of our birthday.... as we were getting closer to being able to open I looked at the calendar to figure out what day would make sense and realized September 9 was possible so we made it happen.

September 9 is my mom's birthday. This year, she would have been 80. It's been a long 16 years without her, and it's the seeds she planted that led me to opening Elm Tree Cottage Bakery. She taught me to bake. We took cake decorating classes together when I was a teenager. She encouraged me to develop those skills. There were LOTS of phone calls home with questions from the kitchen once I moved away from home.

While I wish she was around to answer my questions and take my calls, I know she's still my biggest cheerleader. She always chose angel food cake with strawberries and whipped cream for her birthday, but I know she'd give my Berries and Cream cake a try!

Happy Birthday Mom! It's a privilege to share this day with you!
