I had some extra time over the last few days so baked up baguettes and English muffins for the family.

The English Muffins are made from a beautiful enriched dough, made with a blend of organic wheat and khorasan flours, and plenty of butter, milk, and honey.

The baguettes are simply Organic flour, water, and sea salt, along with healthy active starter. The shaping and proofing techniques are where the magic comes in. I had a good result despite some minor blunders, and I’ll be making them again soon. They have a thin extremely crispy crust and a moist tender and open crumb. I can imagine it sliced with bruschetta or along side soup.

Enjoy this lovely candid shot of me in my bakery space from my littlest Wren, Fletcher. And the delightfully delicious crumb shot of my Blueberry Lemon Artisan Sourdough bread. It’s so good!

This Sunday will be my last bake day until July! I won’t have full use use of my hands most of June due to a couple procedures, so I am taking the month off to recover. Don’t worry, I’ll be back and better than ever in July!

Blueberry Lemon artisan sourdough bread was so popular at the Mother’s Day market that I decided it needed a spot on the menu for the rest of May!

It has honey soaked organic dried blueberries, and fresh grated organic lemon zest. Can you imagine making French toast with this bread, drizzled with real Michigan made maple syrup? Or, go wild and do a savory and sweet panini.

Check out the menu for Sunday May 17th, pickup in Rockford Sunday evening or Monday morning. CTS office pickup Monday.
