I had some extra time over the last few days so baked up baguettes and English muffins for the family.
The English Muffins are made from a beautiful enriched dough, made with a blend of organic wheat and khorasan flours, and plenty of butter, milk, and honey.
The baguettes are simply Organic flour, water, and sea salt, along with healthy active starter. The shaping and proofing techniques are where the magic comes in. I had a good result despite some minor blunders, and I’ll be making them again soon. They have a thin extremely crispy crust and a moist tender and open crumb. I can imagine it sliced with bruschetta or along side soup.
