Have you seen K-Pop Demon Hunters yet? If not, you’re missing out! The cat is definitely the favorite in our house 😅

This past week was quite busier than normal, and yet I forgot to take photos of nearly all of my bakes. But this is one that gave me some brand new and exciting challenges! From the shape to the buttercream “painting” to… the inside! This kitty cat cake is fully vegan. I was able to transform my favorite lemon cake and lemon curd with a few easy substitutions that yielded some nice results! The harder part was the Swiss meringue “buttercream” made with aquafaba! I want to try out a few more vegan butters but I’m overall so happy with the result ☺️ It was smooth and light just like my standard full dairy & egg white recipe.

I’m not ready to announce a full vegan menu yet but I was so happy to take on this new culinary challenge! And doubly appreciative of my client who agreed to be my test case 😌

Maddie Girl turned TWO!!! Can you even believe it?! Time flies… especially with three of these little goofballs running around together 🥹 Our Maddie is a bundle of pure toddler joy. We celebrated with a lowkey day at the zoo and then as a little family and a few friends who graciously caught these photos for us (while holding her own tiny bundle of joy) 🥹❤️ Thank you, Olivia!
