Chocolate Cupcakes 🤎

1 3/4 cups (219g) all-purpose flour
3/4 cup (62g) cocoa powder
1 3/4 cups (350g) sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp espresso powder
1/2 cup vegetable oil (108g)
2 eggs
2 tsp pure vanilla extract
1 cup (240ml) buttermilk
1 cup (240ml) hot coffee (regular or decaf)

Preheat oven to 350F

Whisk the flour, cocoa powder, sugar, baking soda, baking powder, salt, and espresso powder together in a bowl. Set aside.

Using a stand mixer fitted with a whisk attachment mix the oil, eggs, and vanilla together on medium-high speed until combined.

Then add in the buttermilk and coffee. Whisk on low speed until the batter is completely combined.

Makes 24 cupcakes. Bake for 18-22 minutes or until toothpick comes out clean.
