So letā€™s talk about this whole wheat loaf!

Itā€™s my highest hydration sourdough (over 85%)!
I add a drizzle of local honey and sprinkle oats throughout the dough then roll on top as well.

This is such a healthy loaf and the one I always go for when I make a sandwich or want a slice with my meal.

Did you know that on average this little mom owned small business bakes up over 100 loaves each week??

I always offer 7 staples on my menu (classic plain sourdough, my signature ā€˜mermaidā€™ artisan, honey whole wheat, everything seasoned, the soft sandwich loaf and my two savory inclusions- rosemary garlic & jalapeƱo cheddar) plus a rotating seasonal flavorā€¦.

Then of course there are the occasional focaccias, sweet breakfast breads, bagels, granola and now English muffins too!
ALL sourdough 100% so that means no yeast added and it bulk ferments and then cold proofs.

I bulk bake twice a week for the porch and our islandā€™s farmers market.

But back to the main star- the bread and butter of the biz of course- šŸ’™šŸ’œšŸ©· out of over 3000 sourdough loaves mixed (mostly by hand), shaped and baked (mostly just 5 at a time in a standard single oven) it is the mermaid that remains the most popular by far!
Iā€™ve baked well over 500 of these beauties (more than double the sales of my others)!

I definitely think this coastal town appreciates the healthy vibe of this uniquely colorful loaf of sourdough!

NEW MENU ITEM: SOURDOUGH ENGLISH MUFFINS

These are available in either classic plain or whole wheat!

Iā€™ve been saying it since before summer that once the kids were all back in school I could focus on some additional goodies, and those at the market have been waiting patientlyā€¦. They are finally here!
