BREAD RECIPE:
150g active sourdough starter
340g warm water
40g sugar
20g molasses
550g bread flour
14g salt

INCLUSIONS:
100g shredded carrots
70g pecans
50g sultanas

SPICE BLEND:
40g sugar
20g flour
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger

Mix dough together. Let rest for 45-60min.
Add in Carrots, Pecans and Sultanas. Work first set of stretch and folds.
Rest another 45-60min.
Add in Spice Blend. Work second set of stretch and folds.
Work another two sets of stretch and folds spaced an hour apart. Let rise until dough is nearly doubled.
Shape, let rest on the counter for another 30-45min, then cover and chill in fridge overnight.
Bake at 450°F for 45-55 min or until center is 205°F. If using a Dutch Oven keep the loaf covered for the first 25min of baking.

My starter jar shattered to pieces as it fell on the floor, and my heart dropped with it. There went Sam… my sourdough starter I had made from scratch years ago. He was getting super strong and healthy, but there he lay splattered over the floor covered in shards of glass😭
Since this jaw-dropping moment several years ago I make sure to keep a dehydrated backup of Sam on hand for catastrophes such as these.
Thankfully I was able to salvage a small portion of glass-free Sam to refeed and keep my starter alive🙌
Sam is now 10 years old! Super strong, very healthy and ships world wide. He is making
bread all over the United States and in other countries as well. Kenya is the furthest country (I know of) where Sam is making sourdough bread. I’m very proud of him 🤗
