Many cottage bakers use plastic tubs for proofing or choose plastic bannetons. Even when using natural baskets, many still wrap them in disposable plastic covers for convenience. As a result, the dough spends over 36 hours sitting inside plastic.

My bread is proofed using stainless steel bowls and traditional rattan baskets with cotton liners. It is more expensive and requires far more care, but I do it because I deeply respect this living, high-hydration dough—and because I want to be a baker you can truly trust.
