Truthfully, I was having too much fun to take enough videos (note to self: work on my camera skills! 😂), but it was such an amazing learning experience. Huge thank you to everyone who stopped by, grabbed some bread, and made our night! 🫶

3 Acres in Jersey City is having a Summer Night Market next Friday, August 21, and Mini Moon Bread will be there! Come visit me and other vendors from 5pm - 9pm.
I will be selling sourdough favorites like country loaves, pandesal, and crackers. For the first time I will have chocolate cinnamon cardamom buns and for the last time this year (maybe), mini ube babka loaves. So if you’re a fan of those, get them here because I’m retiring them for a while!
The event is free to the public, so stop on by if you’re free! Can’t wait to see you 😌

For those wondering why Mini Moon has been quiet lately... my cousin, Rhea, passed away one month ago today. She fought cancer with incredible bravery and never let it define her.
I had to cancel my last orders because all I wanted was to spend as much time with her as possible. I even took the month of July off, hoping we’d have more time together. She never made it to July 🥺.
Rhea was so many things—a devoted wife, an amazing mom, a loyal friend, and the kind of family member everyone wishes they had. She was also a natural-born helper.
Whenever I needed an extra pair of hands for Mini Moon, she was usually the first to volunteer. She helped me make pandesal for my very first pop-up in the middle of a summer heat wave. Just imagine shaping bread in this weather 🥵 (IYKYK!). Later I asked if she’d help me again once the weather cooled down, and she smiled and said yes. We just never got that chance. Now every time I make pandesal, I’ll think of her.
One of my favorite memories was sitting with her during chemotherapy. I was stressing over something with my cottage bakery when she looked at me and said, “Don’t worry, Sandy. I got your back.” That kind of support came so naturally to her.
She never stopped cheering me on. Even during her hardest days, she texted me to say how excited she was that I’d been accepted into my first (and biggest!) market. Who does that? Rhea did. She always found a way to celebrate everyone else, even when life wasn’t celebrating her.
I’ve noticed a lot of sourdough bakers openly share their faith. That’s never really been me, even though I do believe in God. Rhea’s faith was quieter. She never pushed it on anyone. You saw it in the way she loved, forgave, and cared for people. (Continued in the comments)

The vendors at Baker Street had the opportunity to work with a wonderful photographer, Jamie Meier, of ! Here are just a handful of those photos when she came by my booth on May 16.
Pictured, you’ll see my product (some sold out before Jamie arrived!), my little mascot, Sal de Pan (thanks for the name 🤣), chalk board writing by me and Charo, my mom, my helpers - Jacob and Rinoa, and little ol’ me in my homemade yellow dress 😝.
Thank you again, Jamie, and of course for my very first market as Mini Moon Bread 🌙. Can’t wait for the next one!

For June, I’ve always wanted to create a Filipino flag bread for Philippine Independence and a rainbow bread for Pride Month using all-natural colors. I’ve had some success before, but the red (beet powder) always turned kind of brown. This time I tried dragonfruit powder… and it was even worse 😅 Back to the drawing board.

Here’s my failed attempt. The dough was also way overfermented. Still, it’s good to document the misses so we can learn from them.

I need more time to experiment, and with an important event coming up, that’s not happening right now. But I’m not giving up on naturally colored bread. Just hitting pause for now.

Salty. Buttery. Crispy. Crunchy. Highly addictive 🤤

These sourdough starter crackers are one of my best-sellers…and also one of the most labor-intensive things I make (why do I do this to myself 😅).

But then there’s that first bite and I remember exactly why.

For the Philippine Fiesta in West Orange on June 14, I’m keeping it simple. Of course I’m keeping the Original Flavor, but I’m also dropping a new flavor:

Longganisa-inspired 🇵🇭
Sweet meets savory with brown sugar, garlic, paprika, and black pepper — a nod to the beloved Filipino sausage, without the actual sausage!

No pre-orders. First come, first crunch 😉. Hope to see you there!
