New kitchen tour in stills
My kitchen is very rarely still. It’s more often than not, she is perfect ballet of timing, speed racks wheeling across the tile, a mixer or an oven humming in the background and people doing what they do best. And what’s even more beautiful is that she’s all mine. As of early March, I own entirely the means of production of my own brand, a goal I have been working towards for years. And one that is essential for bakers to remain profitable.
For those of you who have been here for a while you know that I have worked out of a shared use commercial kitchen since 2022. Lots of long years of very difficult conditions, that have included hauling equipment, ingredients and product, lots and lots of hauling- nearly every day- to my retail partners, and to my now closed store front. Those conditions also included paying double rent on a store front and a kitchen (in hopes a new location would materialize), paying well above minimum wage to an incredible team all while still trying to live off a baker’s salary.
It was hard. Very hard. I didn’t talk often about how hard it was because it didn’t seem to serve good hospitality. I believe that you all deserve to walk into a beautiful space with friendly helpful faces and have an excellent experience, the cost to me physically, my sanity and pocket book were not relevant to that mission. But trust me when I say, this s**t was not for the weak and under no uncertain terms, absolutely ran my life. Would never recommend building a brand as I have.
In October, I made the decision to eliminate what no longer served me, the store front and the shared use kitchen, and to embark on building my own commercial kitchen in my basement. It is a decision that upon making I wondered why it had taken me so long to come to this conclusion. My commute is portrayed in one of the slides- it’s blissful and can be done with a cup of coffee in hand. Everything about this space feels right, though I am still learning her.
I’m absolutely delighted to share her with you. She is functional beyond measure with storage to spare and room to grow. And most importantly, she’s all mine.
