Sometimes, a cake turns out better than expected. My intention was to have a chocolate sponge with raspberry curd filling and a dulce de leche Swiss meringue frosting with berries for decoration The curd was too corn starchy and the Swiss meringue frosting was an epic fail. So, REAL whip cream (apparently, cool whip is the norm down here) and berries.
The tart is vegan gluten free with no added sugars. It was a favorite! 🤩 besides the crust not keeping it together, this was the Star!

Someday, I will@master Swiss meringue frosting and curd.
