WEEK 2 of the at home The Great British Bake Off challenge I set for myself. This week, I decided to make the technical challenge of Iced Gems. I baked my signature lemon 🍋 thyme shortbread biscuits and almond total icing. They were a hit! Don’t @ me for not having different icing colors- I’m a teacher during the day and it was the week before fall break! 😝

WEEK 1:
I’m challenging myself each week to bake a challenge from The Great British Bake Off. I didn’t realize the signature was Nigella stout cake, (I’ll save that for the holidays or in March) I did make my carrot 🥕 cake 🍰. Shredded carrots, toasted shredded coconut, brandy soaked raisins, grilled pineapple 🍍 and a cardamom orange cream cheese frosting.
