These aren’t regular eggs. They’re precision-fermented egg proteins — animal-free ovalbumin created by engineering a fungus (Trichoderma reesei) to pump out a molecule that is chemically identical to the protein in a real chicken egg. The FDA issued a “No Questions” GRAS letter, which means the companies can now quietly fold this stuff into baked goods, sauces, mayo, protein products, and anything else that used to rely on real eggs. Most people will never see a label that makes it obvious.
They sold it as progress. Cleaner. More sustainable. Better for the planet. What they didn’t put on the front of the package is the long list of unanswered questions about long-term human consumption of novel proteins produced this way, the complete lack of multi-generational safety data, and the fact that the same biotech playbook has already been used for other “foods of the future” that somehow always benefit the same handful of investors and foundations. Bill Gates has been pouring money into this exact category for years.
