Butterfly Croissants With chocolate custard
Dough
* 500g bread flour
* 90g milk
* 160g water
* 10g salt
* 60g sugar
* 20g fresh yeast
* 40g soft butter
Butter Block
* 250g butter
Colors
* 180g dough + 10–15g black cocoa + 10–15g water
* Remaining dough + orange food coloring
Chocolate Custard
* 250ml milk
* 50g sugar
* 2 yolks
* 20g cornstarch
* 100g dark chocolate
* 10g butter
Method
Mix dough until smooth.
Take 180g dough and mix with black cocoa + water.
Color remaining dough orange.
Laminate orange dough with butter:
* 1 double fold
* chill
* 1 single fold
Roll black dough thin and place on top.
Roll out, cut, fill with chocolate custard, shape butterflies.
Proof until puffy.
Bake at 375°F (190°C) for 16–20 min.
