MENU SPOTLIGHT 🍌 MISO BANANA CAKE

I’ve been making some version of this miso banana cake at home for years, usually as a loaf to share with family and friends when they came by. It was one of those recipes that always disappeared faster than I expected.

When we opened the storefront, I started thinking about how to turn it into something a little more special for the pastry case. That’s how this individual cake came to be. Each one is baked upside down with bananas on the bottom so they become soft and caramelized, almost like a tarte tatin. The cake is incredibly fluffy and moist, and we finish it with a miso brown sugar butter sauce (miso from Miso Master )that adds just the right balance of sweet and salty.

You’ll find these each morning at our storefront at 4418 Monroe Road, Suite A. They’re made just for the shop and won’t be available at our weekend markets.

Local Spotlight:

One of the things we love most about baking in North Carolina is getting to work with incredible ingredients from farms right here in our community. Riverbend Creamery in Lincolnton is one of those special places.

The Lutz family has been raising Jersey cows since 1997, and today they milk around 220 registered Jersey cows on pasture at their family farm. Their creamery bottles milk right on the farm, bringing some of the freshest dairy in the region straight to local kitchens and tables.

You’ll find their rich heavy cream in our mashed potatoes, whipped cream, chocolate ganache, banana pudding, and quiche. Their buttermilk makes its way into our biscuits, coffee cakes, and plenty of other comfort food favorites.

We believe good food starts with good ingredients, and we’re grateful to partner with folks who care deeply about their animals, their land, and their community. That’s something you can taste. Thank you, Riverbend Creamery, for helping us bring a little more goodness to every pie, biscuit, and slice of quiche we make. 💚

One of the very best things about living in the Carolinas has to be the berries. Each summer we wait for those first local blueberries, blackberries, raspberries, and strawberries to show up, and then it’s game on in the kitchen.

Blueberry Crisp is headed to the shop and this weekend’s farmers markets, and we could not be more excited. One thing folks ask us for all the time is more gluten-free and vegan desserts, so this checks both boxes!

Local blueberries and a toasty oat crumble. Our favorite way to enjoy it is warmed up with a scoop of local plant-based ice cream on top, truly hard to beat. We’ll have it available at the storefront and at markets this weekend while it lasts. If you’re a blueberry lover, this one’s for you!

With the opening of our new storefront at 4418 Monroe Road, Suite A, and so many new folks finding us lately, it felt like the perfect time to say hello!

I’m Mary Jayne chef and owner behind Thoughtful Baking Co. I grew up in Gold Hill, North Carolina, and have spent nearly twenty years cooking and baking in the Charlotte area. I opened Thoughtful Baking Co. five years ago and at the heart it is all about comfort food made with ingredients grown close to home. We work with local farmers and food makers because we believe good food starts with good ingredients and the people who grow them. Every pie, pot pie, quiche, and loaf that comes out of our kitchen carries a little piece of that story.

This Carolina season always reminds me why I love what I do. The berries are sweet, tomatoes are on their way and every harvest seems to bring a new idea for the kitchen. When I’m not baking, I’m usually out in the garden. This year I challenged myself to make a bouquet every day for the storefront. I love the way gardenias fill the room and I hope to get some climbing jasmine soon.

Whether you’ve been visiting us at farmers markets for years or just discovered us through the new shop, thank you for being here. It means the world to see familiar faces walk through the door and to meet new neighbors every week. If you stop by the bakery, please say hello. I’d love to meet you. 💚
