As we approach one year (!) of being open, I’ve spent a lot of time reflecting on the highs but also, inevitably, on the lows. Slow days (of which there were many) where lackluster sales and non-existent foot traffic made me wonder if I had made a huge mistake. Busy days clouded over when the dreaded imposter syndrome snuck in. Broken or malfunctioning equipment, which, for a stretch, seemed to be occurring weekly. Recipe flops (monkey bread) and lessons learned (the limit to dinner rolls does not exist the day before thanksgiving). Constant distorted comparisons through the lens of social media. Through it all, I’m so grateful for what this year and these experiences have shown and cultivated in us along the way - patience, dedication, resilience, and above all, GRIT!
