When we first opened the bakery, one of our customers was a very charismatic young gentleman from Lost Elephant Brewing Company named Tom.
We were looking to get some spent grain from his brewing process to turn into flour for our brownies. He excitedly explained how he used locally grown malt from a craft malthouse in Shiloh, NJ. He also mentioned that they have a stone mill for flour.
I started working for Rabbit Hill Farms as a malthouse assistant, learning the craft of traditional floor malting and stone milling flour.
We have been using their flour in our breads and pastries ever since.
Fast forward to Sunday, we got to attend Barley Harvest 2026 on the farm. A gathering of brewers and distilers sharing their wares that were made using locally grown grains, in the fields where the grains were grown, with the farmers who grew them, surrounded by the harvest that will become the beverages shared next year.
How cool is that?
And all the kids had a blast.
