Thanksgiving orders are underway! I had an early request this week for a Vegan Carrot Cake. I swapped ingredients and for frosting, created a coconut oil "buttercream" with shredded coconut and pecans. I'm proud of the results!

I've had several people ask if I would be selling Thanksgiving sides and baked goods again this year:

We are one month away and I've shortened my menu to keep food cost low and Thanksgiving specific. If you have and dietary restrictions, I can easily alter recipes to be vegetarian, diabetic, or non-gluten friendly.

I had a special request this week for a diabetic friendly version of my coffee cake. And I accepted the challenge! I used some molasses to turn monkfruit sugar into "brown sugar," and portioned a mini cake for myself to try, too. What I learned: it browns faster but cooked slower. (I had to make a tent over the top to stop the browning.) The crumb looks perfect, and it tastes is delicious!
