My first time making homemade waffles just happens to be a gluten-free belgian and they’re delicious! Nice and fluffy. I've been gluten free for almost two decades and can't believe I've never tried to make a waffle! Here's the recipe I used:
2 eggs
57 g melted butter or 50 g vegetable oil (I used butter)
2 cups milk (I used 2% lactose-free milk)
1 tsp pure vanilla extract
270 g (2 1/4 cup) King Arthur gluten-free all-purpose biscuit and baking mix. I didn't have this so I used their bread mix.
36 g (1/4 C) buttermilk powder, optional. I didn't have any so I omitted.
2 T granulated sugar
2 tsp instant yeast
Pro tip: Having a waffle iron is highly suggested. 😉
