It’s simple to make, yet rich in flavor and color — a golden touch straight from Brazil’s heart. 🌞

🧂 Ingredients:
• 2 tablespoons of butter
• 1 cup of fresh pineapple, diced
• 1 medium onion, thinly sliced
• 2 cloves of garlic, minced
• A pinch of salt
• 1 teaspoon of turmeric (or ground saffron)
• ½ cup of raisins
• 2 cups of toasted cassava flour (or coarse cornmeal if preferred)

👩‍🍳 Directions:

1. Golden Pineapple:
In a skillet, melt the butter and add the diced pineapple.
Let it brown until lightly caramelized.

Ingredients:
• 1 large red snapper fillet (about 250–300g)
• 2 tbsp Meyer lemon olive oil (or extra virgin olive oil)
• 1 tsp garlic pepper seasoning
• 1 tsp Creole seasoning
• ½ tsp rosemary & basil sea salt
• 2 garlic cloves, minced
• ½ cup yellow bell pepper, chopped
• ½ cup cherry tomatoes, halved
• 1 tbsp butter
• 1 cup heavy cream
• Fresh parsley for garnish
• Cooked rice for serving

Instructions:
1. Prepare the fish:
Rinse and pat dry the red snapper fillet. Drizzle with olive oil and season both sides with garlic pepper, Creole spice, and rosemary-basil sea salt.
Let it rest for about 10 minutes to absorb the flavors.
2. Sear the fish:
Heat olive oil in a skillet over medium-high heat.
Sear the fish, skin side down first, for 3–4 minutes per side until golden and slightly crisp. Remove and set aside.
3. Build the sauce:
In the same pan, melt butter and sauté minced garlic, yellow bell peppers, and cherry tomatoes until fragrant and soft.
4. Add the cream:
Pour in the heavy cream, stirring gently.
Season with a pinch more Creole spice and garlic pepper. Let simmer on low heat until the sauce thickens into a rich orange hue.
5. Combine & serve:
Return the fish to the pan and spoon the creamy sauce over it.
Serve with a side of white rice and sprinkle with chopped parsley for color and freshness.
