横滨人气面包店后厨班,6/4-7/4 终于圆满结束。🎓🎉

这一次,不只是学习,
更像是走进一位匠人真实的世界。

黑沼老师的面包店,
坐落在横滨的山丘之上——《丘の上のパン屋》。
一个安静却充满力量的地方,
诗意之中,藏着极致的坚持。

老师从烘焙学校毕业,
投身面包超过十年,
并在2018年创立这家人气排队名店。

最让我震撼的,
不是规模,而是“纯粹”。

整家店的面包,
由老师一人亲自制作,
每天只做约50款面包,
却依然吸引无数人排队等候。

这份坚持,
让我重新思考什么是“好面包”。

老师的技术手艺,
没有多余的修饰,
却在每一个细节里体现出极高的稳定度与精准度。

从面团的状态、发酵的掌控,
到出炉那一刻的判断,
每一步,都不是技巧,
而是一种长期累积的理解与感知。

这不仅是学习技术,
更是学习一种态度——
对品质的执着,对节奏的尊重,对面包的敬畏。

面包有如人生,
不求快,但求稳;
不求多,但求精。

这趟旅程,
让我更坚定自己的方向——
用时间,去做好每一款真正有温度的面包。

也期待把这份学习,
带回 The Good Bread,
带给大家更深一层的体验。

Grateful beyond words for my two apprentices.
After months of dedication and hard work, they have truly grown into something I can trust wholeheartedly.

Because of them, I am able to step away with peace of mind, traveling far to continue my learning journey.

I hope that when I return, I can bring back not just new skills, but a deeper experience — something more meaningful for everyone who believes in what we do.

Bread… is truly a lifelong study.
There is no end to learning, only deeper understanding with time.

Before I leave, I find myself wanting to savor our sourdough once more —
every bite filled with care, patience, and quiet happiness.

I sincerely hope our customers can feel that too.

At The Good Bread, sourdough is more than just bread —
