You must always sift your flour.
Unless you’re making a delicate sponge or your flour is visibly clumpy, modern whisking usually does the trick. Save your arm workout for the kneading!

Brown sugar and white sugar are interchangeable.
​Brown sugar contains molasses, which adds moisture and acidity. Swapping them can mess with your cookie’s spread and the way your leavening agents react!

You can't overbeat egg whites.
​Oh, you definitely can. If you go too far, they become grainy, dry, and lose their ability to hold air. If your meringue looks like clumps of styrofoam, you’ve gone too far!

​Extra vanilla makes everything better.
​Okay, we actually agree with this one... mostly. 😉 But too much can add a bitter alcohol aftertaste!

Salt is optional in sweet recipes.
​Truth: Salt is a flavor enhancer. Without it, your chocolate tastes flat and your caramel lacks depth. Never skip the pinch!

All-purpose flour is fine for everything.
Protein matters. Bread flour gives you chew; Cake flour gives you crumb. Use the right tool for the job.
