Ever iced a cake, kept it in the fridge overnight, and found THIS in the morning? Cracks. Again. 😭
Here’s what’s actually happening:
1. The ganache gets too cold ❄️
When you keep a ganache cake in the fridge for several hours, the ganache becomes really firm.
2. Then comes the whipped cream 👀
If you put whipped cream directly on that very cold ganache, the sudden temperature change can cause the ganache to crack.
3. The easy fix? 🤌🏻
Take the ganache cake out of the fridge and let it come back to room temperature before adding your whipped cream.
4. Give it around an hour ⏰
Especially if you’re taking it out in the morning after an overnight chill, let it sit for about an hour first.
5. THEN add your whipped cream 🎂
Once the ganache has softened slightly, you’re good to go.
So basically:
Cold ganache → room temperature → whipped cream.
