Sharing some of the bakes from yesterday morning as there’s never any time to do it on the day. Hope you enjoyed the dairy and egg free (vegan) cardamom bunzzz.

Such a beautiful morning and I love sunny autumnal days 🍂🍁🍂. I had a great bake yesterday and sorry if you missed out on the fika and bread, but I promise I’ll push even harder next month, just figuring it all out.

Thank you, thank you, thank you for coming down, you’re flippin’ awesome! 🙏🏽

Another sunny day down here in Devon and I’m having a well needed rest with the family, hopefully I’ll find some parasol mushrooms.

Next week I will launch something new, so keep your eyes peeled. Have a great Sunday.

Annika ❤️

AD: Happy International Real Vanilla Day! 🌱🤍

I was gifted a beautiful box of LittlePod’s real vanilla pods and products and invited to create something special to celebrate.

I decided on a decadent and colourful vanilla bun, made with freshly ground cardamom seeds in the dough, vanilla bean browned butter remonce and saffron & vanilla bean mascarpone cream, topped with vanilla bean poached quince as quince is in season and saffron will be in season very soon.

Real vanilla comes from an orchid and can take up to five years from planting to become the fragrant pods we bake with. Choosing the real thing helps support the farming communities behind it.

I’ve been using LittlePod’s real vanilla pods for years and am proud to support them and their Campaign for Real Vanilla, championing responsibly sourced vanilla, biodiversity and the communities who grow it. 💛

I’m back on the Quay this Saturday Exeter Quayside Farmers’ Market and Princess Cake Slices will be back along with similar menu and seasonal treats I’ve been doing since beginning of September using Apples and Pears from the allotment. I am still changing things around a little bit, as I always do each week.

✨ The BIG news is that my VEGAN 🌱 Swedish buns are BACK! They will be available at this market each month and there will be a limited number to start with, as I haven’t made these for over 3 years. ✨

Oh my days, what a busy morning yesterday, the students are definitely back! Thankfully, I’d anticipated it and baked a lot more this time.

Quite a few new faces yesterday, two ladies had travelled all the way from Truro just to try my Fika goodies and sourdough bread, how lovely is that.

Absolute carnage in the bakery though. The most stressful bit, by far, is p o s t - b a k e … dressing all the buns and pastries in time before they all need to be packed up. Especially when you’re doing it all solo.

Maybe, after five years, it’s time to look for a part time baker to join me at Fika HQ.

Your support never fails to blow me away. Thank you SO much 🙏🏽 and for waiting so patiently when I was running 10 minutes behind opening time.

More carnage, more buns, pastries, bread and maybe some Princess Cake slices next week, when I’m back at Exeter Quayside Farmers’ Market 💛.

It all disappeared too quickly last time so I’m making more, and moooore cardamom bunzzzz 😍. It’s always advisable to be there around 10am so as not to miss out on the specials.

Also wanted to highlight that Alex at Pullo Shop has some really lovely produce if you need some treats for the weekend or any time; gorgeous additive free natural wines, ciders, local cheeses and charcuterie, all of which go very well with my sourdough bread and savoury treats 😉.

🍂🍁🍂 This Saturday I’m back at .shop , second Saturday of each month !

The lemon, poppy seed & lemon 🍋 curd bun will RETURN this week. It took a little break these past few months to make way for the wonderful berry season. Katalaner’ will also make an appearance along with freshly milled 100% wholegrain pies, with a new seasonal topping. I have yet to make these, so a photo from the summer using courgettes from the allotment will have to do for now.

Menu will be shared later in the week. 🍂🍁🍂

Happy 5th Birthday to Fika 🥳 and Glad Kanelbullens Dag! 💙💛.

If you had told me a year ago that by Fika’s next anniversary I’d have my own bricks and mortar bakery, I wouldn’t have believed you.

Yesterday I celebrated Swedish Cinnamon Bun Day and Fika’s 5th anniversary at Topsham Saturday Market. A massive thank you to everyone who came down to celebrate with me. I gave away 60 cinnamon buns, and it was so lovely to give something back to my wonderful, loyal customers who have shown me such incredible support over the past five years.

I know many of you by name, and some of you are now friends. Without you and your incredible support, which I never take for granted, there wouldn’t be a Fika.

Fika is more than just a bakery. So many relationships, connections and friendships have been built over the years with my customers, bakers, local farmers, millers, producers and fellow traders. That direct, in person connection with people is so important to me, and it’s what Fika is all about.

A BIG thank you again, for being here. My heart is so full ❤️.

New bakery, same Mockmills, and the same freshly milled, beautiful heritage and population wheats and rye. 🌾

The grains are grown locally and sourced directly by me, in person, from farmers and local millers within the fantastic South West Grain Network, of which I’m a proud member.

I’ve been milling fresh flour for several years now, and these days I use a lot of wholegrain flour in my bread and sweet bakes, because there are so many great benefits a n d it’s darn tasty!!

It matters to me where the grain comes from, building connections and relationships directly with the farmers and small millers, milling it fresh, and using flour in its most natural form.

Bye September and welcome October! 🍂🍁🍂

Some of yesterday’s offerings at the Met office featured in photo, and I’ve realised it’s difficult to get good natural lighting in my new bakery 😆.

Yesterday was the last Raspberries of the season and we will now continue with apple, pears and nuts this month. The cream buns will come back too. I’m just finding my feet in the new bakery with practicalities and new routines of loading the car Saturday mornings. When I have some spare time, I will develop more savoury options for you, bring back good old ones and introduce my new Diversity loaf.

Just a little reminder I’m back at Topsham Saturday Market this Saturday and I’ll be celebrating two things, Swedish Cinnamon Bun Day a n d 5th Anniversary of Fika 🥳.

To celebrate, I’m giving away FREE cinnamon buns to the first 50 customers, like I do every year.

Here’s the menu:

B u n s & C a k e
Cinnamon & Cinnamon / Vanilla bean creme pat
Cardamom & Cardamom / Vanilla bean creme pat
Tosca
Autumnal bun - Apples, crumble, creme pat & salted caramel

Pear, creme pat, almond, cinnamon & dark choc crumble
Vanilla bean
Pistachio
Wholegrain spiced Applecake and cream fraiche cream

S o u r d o u g h

Can’t wait to see you all Saturday! It’s always best to arrive at 8.30am or shortly thereafter as things don’t hang around for very long and you don’t want to miss out on a free cinnamon bun 😉.

Annika 💛

Good evening, just a little reminder you can always preorder these Swedish braided bun “loaves” for any of the markets and pop ups I do, save for the Farmer’s Market on the Quay ☺️. I make them in five flavours: cinnamon as featured in photo, cardamom, vanilla, pistachio and saffron (the latter when in season).

Tomorrow morning I’ll be at the market at the Met Office, which I do about 1 - 2 times per year, whoop! It starts at 10am.

Also if you missed my previous post, I’m back at Topsham Saturday Market this Saturday and we are celebrating 🥳, more info and a menu will be shared later in the week.

Look forward to seeing you in the morning. 💛
