Last night an old friend from elementary school got married.
We hadn’t really been in touch all these years (I won’t tell you how many), but somehow managed to stay connected over social. It wasn’t until last year that I was blessed to reconnect with him and meet his wonderful partner (now wife)! In such a short time these two have become some of my biggest cheerleaders and I’m eternally grateful for their friendship, support and encouragement.

When I heard that Mat proposed to Julia while she was eating her favourite Newman O’s, I knew I had to make some for the wedding. I made the classic for her and Mat’s request was matcha and black sesame. Double stuffed, obviously.

Every day I’m Trifle-in’

Whipped up this trifle for an offsite wedding today . The couple requested a preference for custard and fruit. Trifle seemed like the most suitable dessert. Maybe I should start making Trifles for HAZL🤔

I recently shared the news that I am taking a little summer hiatus from and to experience the organic farm and pastry chef life on . It’s been roughly 3 weeks and I’m settling in nicely into my new roll here.
So why here and why now? Well, I’ve always dreamt of being pastry chef at a restaurant but never found the right place in the city. And as you all know, using organic, local and sustainable ingredients is fundamental to HAZL’s mission, so I felt like it was an important part of my growth as a chef and consumer of food to learn more and get connected to the source of the ingredients I use.
I am just having the time of my life being fully immersed in the learning, creativity and beauty of this place and this team. I am truly the most fortunate.

Here’s a photo my neighbour Steph took of me shoving juicy mulberries into my mouth. I’m as happy as a pig in s**t.
