The Night Baker is from the cookie-loving minds of Toronto baking duo Mitch and Leanne. Chemists turned night-time bakers and food lovers through and through. We make new recipes based on things we like to eat, things we grew up with and our experiences from travelling in wonderful places with delicious foods. But mostly we just love eating cookies and sharing them with you all to enjoy.

New look, same great cookies 🌙

You might have noticed our boxes got an upgrade recently. While our old boxes were good, Leanne wanted to spruce them up a little bit so she designed new boxes for our bakeries.

The new boxes are more secure, functional, and just plain beautiful wouldn't you agree?

All with a lil bit more Filipino-Canadian flavour sprinkled in 🇵🇭🇨🇦

Our Dubai Brookies are made with our addicting housemade Pistachio Kataifi that's stuffed inside our chocolate brookies. They're topped with a smooth chocolate ganache to finish.

Our Ube Cake Cups are made with Real Ube from the Philippines! We make our Ube halaya custard in house so you get creamy delicious Ube that's not too sweet.

I come to our North York bakery around 3-4x every week to restock the shop with cookie dough and anything else the store needs.

Before when we had our 3 bakeries I would usually get here around 11pm.

Now? 6pm.

It's honestly been so nice to see our little bakery get so much love in person much more often nowadays that I come earlier.

Even though I'm always carrying stuff in and out of the store, we've had more than a few customers who've recognized me and kind enough to say hi. Always so nice chatting with all of you! Just please excuse my always haggard appearance 😄

And after? Home by 7pm. Just magical.

This is what we really bought when we sold our College St bakery. Time is magic 🔮🪄✨️

The Night Baker's Desserts Aug 25-Sep 6 🌙

We have a BANGER menu coming this week to end the summer! 🔥

For our current "Secret Menu", we have some of our most popular cookies coming back with the Dubai Brookie, Moochi, Almond Croissant and Cinnamon Toast Crunch.

We wanted to make the end of summer extra special so we decided to have some of our most delicious and creative cookies on the menu this week.

We've also decided to extend the run of The FIRST Premium Silvanas & Sans Rival Bakery in Canada Ube Cookies and Cream aka BTS Silvanas at our bakeries. They were very very popular last week so we've decided to restock them at our bakeries along with the Ube Latte and Yema Silvanas. They are currently available at our North York bakery and will be available at our Danforth bakery soon.

Thank you friends only a few weeks of summer to go let's make it count! ☀️

We've now ended our limited time cake special the Mangga ni Pandak / Mango Shortcake 🥭🍰

The earliest version I made of this cake was for my birthday but since mangoes were not in season, I instead made a Mango/Strawberry Shortcake hybrid. It was really good! So good in fact that we decided to put a 100% Mango Shortcake version on our menu.

Each cake had A LOT of mangoes in it and not too sweet. Just the way we like it.

We didn't get a chance to make a big launch of it because as soon as we teased this cake during the start of the summer we got A LOT of order requests.

We weren't planning to to take orders then but we said, why not! Each week after that we kept taking more orders until we put it on the website and sold out each week.

We actually stopped taking orders on our website weeks ago but still got a few special requests which we of course said yes to kasi malakas kayo samin (you're all too special to say no to) ☺️

Now it's time to say goodbye goodbye to our Mangga ni Pandak for the season. Thank you to everyone who ordered hope you all enjoyed our Mango cake!
