Our spring menu is in full bloom! We have fresh crop Colombia galore with returning favorite Frank Torres in Birthday Cake with both Caturra and Pink Bourbon offerings. His coffee is always incredible and both lots taste like a party. To match our new decaf we have an inbound Sidra from Karol Ortega and a passion fruit co-ferment on the way from Angel Ortega!

We are sadly down to the last of our Peru and Uganda lots for the year. Both had stellar harvests and I highly encourage trying both before they leave the menu. We still have some of Fredesvinda Estela and Lenin Fores’ coffees in Shady Lane and Last Splash. They both have a comforting balance of caramelized sugars and bright orange flavours. While in Sugar Mountain we have a low oxygen lot from Kisoro Estate. It is candy sweet with a light creamy backdrop and punchy berry notes.

We are trying to keep the web store stocked up these days and not be perpetually ‘sold out’! And as always, we do add more bags every Monday and Wednesday at 11am.

Thanks to Harold Taylor at the Coronado Historical Association for these beautiful slides 🌺

Espresso versus Filter? What’s the difference and can you use filter roasts on an espresso machine? Or brew espresso roasts on a pour over?

Time for our semi-annual social media post! Our Summer menu is slowly giving way to Fall with some very fun coffees on the menu:

In both Sugar Mountain and Possibly Maybe, we have Cup of Excellence winners! Bekele Yutute Gosoma returns with a wonderfully tropical cup. This JARC 74158 lot was processed by Bekele’s nephew, Samuel, at the Kokose Mill and underwent a 48-hour low oxygen fermentation. The resulting profile is heavy with banana, raspberry, and effervescent orange. While in Possibly Maybe, we have a Sidra from Arnulfo Leguizamo and his El Faldon farm. Given the varietal and immaculate washed processing, it is an extraordinarily floral cup with a nice mango and caramel backdrop.

On the espresso menu, our lots from Aequitas continue to provide nostalgic warmth in Allie & Lennie. This fall you can expect offerings from Yuki Minami, Ernesto Yamamoto, and fellow Cup of Excellence winner, Marcelo Assis! Magnolia is currently featuring the return of Octavio López Compeseco, showcasing his bright but balanced coffee from his El Durazno farm.

And in Shady Lane and Last Splash we are currently roasting the last of this year’s Kenyan offerings along with a delightful Tabi lot from Javier Burbano and Monkaaba. For both, we will soon have some fresh crop from Cafe Colis Resistencia via Brendan at Semilla!

Lastly, did you know we answer coffee questions on our blog? If you ever have a question about our coffee or roasting or really anything, drop us a message!

BANDWIDTH! Our web shop regulars might have noticed a larger than normal restock this past Wednesday. It is because we have moved into our new space and started roasted on our bigger roaster! There will be amre about the entire moving experience coming soon on the blog but for now: we are slowly getting the new Probat dialed-in, we finally have some space for packing up orders, and starting this week, we are going to be adding stock on both Mondays AND Wednesdays. The Fall menu is also dropping with a ton of fun new coffees including everyone’s favourite !

Unsurprisingly, scrapping everything to start fresh in a new space has been … a challenge (trust the process, etc.) AND I just remain so very thankful for all the support because that is the only reason we have a new home

The Quietly Summer menu is in full bloom and shining bright! Some highlights:

Last Splash • From Kirinyaga Station in Kenya • It is hard not to associate warm weather with fresh crop Kenya! This lot from smallholder farms collected at the Kirinyaga washing station sparkles with those hallmark blackcurrant and red berry flavours, along with an abundant floral sweetness. With a cola finish, it is great brewed strong over heaps of ice.

In The Sun • From Ismeal Hassen in Ethiopia • This is year five partnering with Kayon Mountain farm in Shakiso and this harvest once again delivers lush rose notes with sticky stone fruit and berry flavours. This natural processed gem has less chocolate than last year’s harvest and more juicy orange, apricot, and nectarine.

Sugar Mountain • From Dung K’No in Vietnam • This is our first time partnering with producers in Vietnam! 180 farms make up the Dung K’No commune, which grows a wide diversity of crops that includes rice, vegetables, persimmon, jackfruit, macadamia, avocado, bananas, peaches, and, of course, coffee! Freshly harvested cherries are processed at the Duc Trong Mill and this special low oxygen fermentation is heavy with cooked melon and papaya over milk chocolate and cream notes.

Possibly Maybe • From Mbilidino in Tanzania • Possibly Maybe delights in unexpected profiles, emergent producers, or often unrepresented origins, like Tanzania! This lot comes by way of 378 producer members at the Mbilidino cooperative. The cup is bright with a sparkling citrus acidity, akin to lemonade, that shifts towards creamy orange. The finish is all sugar, with nice rich toffee and caramel flavours.

Some good news on our always sold out and wholesale wait list fronts: we are moving into a bigger space in August! More details soon but it should mean we will have a much easier time stocking our store and we can finally expand to more cafes and shops!

Thanks to the Virginia M. Kline Archive at the University of Wisconsin-Madison for the perfect Summer images!

Quietly turned five this Spring, which is hard to believe! It is one of those spans that paradoxically seems too long and too short to be true. When we packed up our Parkdale apartment and headed t…

Two sunny and tropical tasting coffees joining our Winter Menu! I am always happy to welcome back Frank Torres’ coffee and this fresh Pink Bourbon lot is stellar. You can expect all kinds of vibrant fruit notes like pineapple, papaya, and guava with a burst of fresh citrus and a big maple syrup finish.

The other new addition this week is from Kindeng Mill in Papua New Guinea! At this time of year, we are typically welcoming back Moses Venapo’s coffee but sadly his mill ran into some water-issues, and he is not exporting. In place of his Riverside Mill, we have this delightful naturally processed lot with loads of sticky mango and bright orange flavours! It has a long and hazy caramel finish that is just perfect for chilly winter mornings.

Both will be restocked this Today/Wednesday at 11am ET but, as always, the best source for Quietly is our partner shops and cafes. You likely have seen posts about CEBA loans, ever rising costs, and the general stress and crushing dread impacting hospitality right now. Supporting your local goes a long way. And the community that forms at shops, the expertly extracted drinks, and the wonderful people who work the bar are all irreplaceable. Our current shop list can be found under the “sold out” tab. We truly appreciate and remain so thankful for all the ongoing support for our partner shops and for Quietly!
