🍁🍂Happy baking!! 🍎
Apple Walnut loaf:
3 medium apples, grated
1/2 cup butter, softened
1/2 cup white granulated sugar
1/2 cup light brown sugar
2 large eggs
1 tsp vanilla extract
1 tbsp ground cinnamon
2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt (omit if using salted butter)
1/3 cup chopped walnuts (optional)
For the caramel glaze:
1/2 cup butter
1 cup light brown sugar
1/4 cup heavy whipping cream
1/2 tsp salt (omit if using salted butter)
1 tsp vanilla extract
Instructions:
1) Using hand mixer, combine softened butter and sugars until well blended.
2) add in vanilla extract
3) add eggs one at time, just until combined. Don’t over mix
4) combine flour, cinnamon, baking powder, baking soda and salt then add to wet ingredients.
5) Add nuts (if using) and grated apples when flour is half mixed to prevent over mixing.
6) pour into greased loaf pan.
7) Bake at 350* Fahrenheit for approximately 45 minutes. Actual bake time will vary depending on your oven. Done when inserted toothpick comes out clean or with tiny crumbs (not wet)
-Allow to cool on wire rack while making caramel
For caramel:
1) combine brown sugar and butter in sauce pan over medium heat and mix until smooth and sugar has dissolved.
2) add heavy cream and bring to slow simmer 1-2 minutes while stirring to prevent burning or boiling over.
3) remove from heat and add salt and vanilla.
Stir to combine.
4) allow to cool for about 10 minutes to thicken before pouring over cake.
5) top with more chopped nuts or sprinkles if desired.
6) Enjoy!
